The olive oil produced by Olivares de Altamira is a unique blend of high-quality extra virgin oil, made exclusively from olives of the Verdeja Verde variety, which is indigenous to this region of Spain.

The olive oil is carefully crafted from traditional cultivation methods, utilizing centuries-old olive trees of the Verdeja Castellana variety, which thrive in the harsh climate of the Alcarria region. The unique combination of these factors, along with the mill's location within the Sierra de Altomira, results in a final product that is distinguished by its authentic naturalness and quality. 

The extreme conditions and severe continental climate of Castilla with temperatures between -17 and 40 degrees, and its location at almost a thousand meters of altitude have kept the trees free of pests and diseases for centuries.
